Joao Carlos Oliveira arrived at the age of 17 in the United States, leaving behind his home town Belo Horizonte in Brazil. He worked in several restaurants such as Bice in New York, Bice in Washington DC, Bice in Palm Beach, Il Tri Merli in Miami Beach, and Folia. He learned the secret of the seasonings and the culture of the Italy with the great masters of gastronomy.

Today, Joao, known mostly as Juca, has 2 Restaurants in Miami - Tutto Pasta and Tutto Pizza. Juca also owns a pasta factory as well. Since 1994 Tutto Pasta has been the mark of quality in Miami.
